Turmeric Carrot Soup

Turmeric Carrot Soup
Hello, turmeric! Not only is this golden spice delicious in soups, it tastes amazing and aids digestion too! Try it with the flavors of carrot, tomato, and onion in this hearty soup that will easily become a favorite all year round. 

 

Ingredients:

  • 1 lb bag of carrots, peeled 
  • 1/2 white onion
  • 2 garlic cloves
  • Olive oil
  • 1 28 oz can diced and peeled tomatoes
  • 1 tbsp turmeric
  • 1/2 cup vegetable stock
  • Croutons
  • Cilantro
  • Salt + Pepper, to taste

Instructions: 

  1. Preheat oven to 400F
  2. Peel carrots and cut into 1 inch cubes
  3. Chop onion and peel garlic cloves
  4. In a medium bowl, toss carrots, onion, and garlic in olive oil and add a dash of salt
  5. Spread evenly on a baking sheet and roast for 20-25 minutes
  6. In a food processor, add carrots, onions, garlic and turmeric and pulse
  7. Add tomatoes and pulse again
  8. Pour mixture into a Dutch oven or pot and stir in vegetable stock to desired thickness
  9. Add salt and pepper
  10. Top with croutons and cilantro
