Pink Beet Pasta
Did you know you can turn ordinary pasta pink using beets? This super easy addition adds a vibrant look to otherwise an ordinary meal and keeps your gut happier. Serve this with your favorite sauce and enjoy!
Ingredients:
- ½ lb farfalle pasta
- 2 roasted beets
- Parmesan cheese
- 2 garlic cloves
- Cherry tomatoes
- Olive oil
- Salt
- Pasta sauce of choice
Instructions:
Cook farfalle until al dente, set aside. In a food processor add beets, chopped garlic, a dash of olive oil and salt and pulse until it resembles a pesto. Toss in the sauce until thoroughly covered. Serve as is or rise off then serve with grated Parmesan, sherry tomatoes and your favorite sauce. Enjoy!
